Delicious butter biscuits, very aromatic and perfectly sweet.
To make 12 biscuits, you need:
– 100g butter, room temperature
– 1/2 cup icing sugar
– 1/2 tsp vanilla
– 1 heaped cup flour
– 1/2 tsp baking soda
– 2 Tbsp cornflour
– 50g white chocolate, chopped roughly
Beat the butter with the icing sugar until they fully blend into a cream.
Add the vanilla and corn flour. Mix well.
Add the flour while mixing.
The dough should feel buttery but you should be able to knead it into a ball.
Add the white chocolate pieces. Knead a little more.
Shape the dough into a roll, wrap in cling film and refrigerate for 20 minutes.
Slice the dough into 1 cm rounds and place on a baking sheet on a cookie tray.
Bake in 180C for 15 minutes. The biscuits should be soft when you touch them but golden in color.
Leave outside to cool and harden a little.
