Cranberry and Blackberry Muffins

I have NO idea what has gotten into me, but I am suddenly baking different kinds of muffins NONSTOP! They are so easy to prepare and they bake so fast and they look so cute. They’re great for any and every occasion.

Cranberry and Blackberry Muffins

Ingredients (make 6 muffins):
– 1 cup sifted flour
– 1/2 cup brown sugar
– 1/2 tsp baking soda
– 1/2 tsp vanilla
– 1 egg, whisked
– 3 Tbsp oil
– 1/2 cup milk (or less)
– 3/4 cup berries (cranberries and blackberries – I used frozen)

– Preheat oven to 350F.
– Mix dry ingredients together.
– In another bowl, mix the egg with the oil and milk. Whisk together.
– Add the liquid ingredients to the dry ingredients. Mix well.
– Add the berries. Mix well.
– Pour into muffin cups.
– Bake for 25 minutes.

And you’ll have the cutest muffins to have with your cup of coffee or tea for breakfast or even in the afternoon with a glass of homemade orange iced tea.

    lovelylou! first of all: we miss you, and love you, and hate you!! yesterday we were at the closest Ikea from home (only 350 km), on our way back to routine… and then mounir saw that little cheap precious cupcake paper cups… let’s take it! and we did… this afternoon, after a long and healthy siesta, I woke up with muffins invading my mind… let’s do it! and we did…
    here you have the results… a kind of a mess… with some yummy parts but not beautyful at all… you can see the only survivor in my hands.
    While we were waiting for the disaster, we had the idea of taking a look on confettina’s blog… and what do we find? perfect cupcakes… beautyful and yummy cupcakes and all the ikea items we wanted to buy yesterday (specially that green ceramic plates)!! you have’em all at your home! and, summarizing, that’s why we MISS you, and LOVE you and… ok! we don’t hate you at all, we can’t… so we will wait for november… we will improve, and we want a cupcake contest! ja! so lots of kisses to you and that lucky cupcake eater, R.
